That is a little bit hard, you need to change /usr/share/themes/Ambiance/gtk-2.0/gtkrc documents. It is not as hard as it appears to be, the syntax is really instinctive. I do not recognize just how is the dropmenu called this progamming language, yet it has to be something with "food selection", I assume. The only point you need to recognize is RGB code of shades.

I looked at the documents and also it appears to be the  style "menu" = "dark" {  component in gtkrc.
